Bacon and Asparagus Soldiers
“These are stupid good,” according to one of our very grateful sons (like father, like son)! Originally intended to be dipped into the soft yolk of a boiled egg, we decided since, as we have mentioned, we live with egg-phobic husbands, that the ‘soldiers’ might stand in equally well with other partners and we’re ever so glad we gave them a go! We urge you to make these soon, whether as a supper dish (with, perhaps a bowl of soup?) or with said boiled eggs for a lovely brunch. Be warned, however — spontaneous clapping at the table may ensue!
Bacon and Asparagus Soldiers
16 asparagus spears
8 long, thin pieces of rustic bread, preferably sourdough
8 slices of bacon
Snap off the woody ends of the asparagus and discard. Bundle 2 spears of asparagus with a piece of bread and wrap with a slice of bacon. Place on a baking tray, season and continue with the remaining ingredients. Broil for 15 minutes, or until the bacon is crisp, turning a few times.
