This might be our new favorite way to prepare potatoes! Salty Parmesan cheese combines with dried thyme leaves to melt into the cut side of baby potatoes. The result is a perfectly tender potato with a cheesy-laced top. So simple and so irresistible, we could make a meal of these alone!
7 tbs. grated Parmesan cheese
1 tsp. dried thyme leaves
2 lbs. baby potatoes
1 tbs. extra-virgin olive oil
Heat the oven to 400°F. Line a small baking dish (enough to hold the potatoes snugly in one layer) with parchment paper.
Tip the cheese and thyme into the dish and toss to mix. Cut the potatoes in half lengthwise and lay the cut-side down in the dish. Drizzle with the olive oil and bake for 35-40 minutes, or until the potatoes are tender. Serve hot.
