Quick Tomato Relish

Here’s a versatile recipe to have on hand as tomato season starts to ramp up! GoodFood suggests serving this relish alongside simply prepared chicken or fish, and it is wonderful for that, but we’ve come up with another idea: spread the relish over a piece of naan bread, top with cheeses (we like to use shredded mozzarella, grated Parmesan, and pearl mozzarella), and cook on a hot grill until the naan is crisped and the cheeses are melty. Delicious!

Quick Tomato Relish

2¼ lbs. plum-type tomatoes
2 diced red onions
5 fl. oz. extra virgin olive oil
2 tsp. flaky sea salt
2 garlic cloves, minced
3 tbs. small capers
3 tbs. chopped parsley
1 tbs. balsamic vinegar

In a mixing bowl, toss together the tomatoes, onions, olive oil, and sea salt. Tip onto a baking tray and place under a hot broiler for 5-10 minutes until charred.

Tip back into the bowl, stir in the garlic and capers and leave to cool, then stir in the parsley and balsamic vinegar. Store in the refrigerator until ready to use.
