Herb Cheese Toasts

Simple and delicious, these are the sort of nibble that everyone loves. This is really a template for many recipes: you could use Boursin cheese instead of cream cheese, or substitute a different cheese for the cheddar — the possibilities are almost endless. Customize it to your taste and enjoy!

Herb Cheese Toasts

1 baguette
softened butter for spreading
4½ oz. full-fat soft cream cheese with herbs and garlic
6 oz. grated cheddar cheese
mild paprika

Heat the oven to 350°F. Cut the baguette in half lengthwise. Spread each half with butter, then the cream cheese, and sprinkle with the cheddar. Dust with paprika and place on a baking sheet. Bake for 8-10 minutes, or until melted and golden. Leave to set for a few minutes, then cut into slices to serve,
