Chocolate Chip Banana Bread

When our children were little one of their favorite treats was banana muffins with mini chocolate chips: we can’t count the number of them we have made! Therefore, when we saw this recipe it was with happy nostalgia that we baked it straight away. It was delicious — light in texture with a true banana taste. We are certain our children would wholeheartedly approve of this iteration!

Chocolate Chip Banana Bread

9 oz. flour (scant 2 cups)
1 tsp. baking powder
1 tsp. baking soda
¼ tsp salt
8½ tbs. butter, softened
3¾ oz. caster sugar (scant ½ cup)
4 very ripe bananas, mashed
2 eggs
2 tbs. milk
½ tsp. vanilla extract
7¼ oz. chocolate chips (1 cup)

Heat the oven to 350°F and grease a standard loaf tin.

Sift the flour, baking powder, baking soda, and salt into a bowl. In another bowl, cream the butter with the sugar until light and fluffy. Beat in the bananas, eggs, and milk, then fold in the flour mixture and chocolate chips. Spoon into the tin and bake for 55-60 minutes, or until a tester comes out clean. Leave to cool to room temperature before serving.
