Fudgy Coconut Brownies

What’s better than a squidgy, chocolatey brownie? A squidgy, chocolatey brownie with coconut!!! If you like a Mounds candy bar, that classic combination of dark chocolate and coconut, then this will be right up your alley. The bonus here is that the entire recipe is mixed in one big saucepan, so the washing up is quick and easy.

Fudgy Coconut Brownies

1 cup unsweetened cocoa powder
17 tbs. butter
2½ cups golden caster sugar
4 eggs, beaten
¾ cup flour
1 cup flaked coconut

Heat the oven to 350°F and grease and line the base of an 8″ square pan with parchment paper. Put the cocoa, butter, and sugar in a large saucepan and gently melt, stirring, so the mixture doesn’t burn. Cool slightly, then stir in the eggs, little by little, followed by the flour and coconut. Tip into the pan and bake for 40-45 minutes, or until cooked through. Cover with foil if the top is browning too much. Cool in the pan, then cut into squares.
