Caramelized Spiced Nuts

We love serving nuts as a little nibble before dinner with drinks. You can use any nut you like here. We used almonds, but we think pecans or peanuts would be lovely as well.

Caramelized Spiced Nuts

1¼ lb. nuts
1 tsp. sea salt
1 tbs. olive oil
1½ tsp. chili powder
2 tsp. cumin seeds
2 tbs. honey

Heat the oven to 325°F.

Heat a large, heavy pan until hot. Add the nuts and salt and cook for 2 minutes, stirring occasionally. Drizzle in the oil and stir until the nuts smell toasty. Sprinkle in the chili powder and cumin, then stir for another 2 minutes. Add the honey and stir until well coated and beginning to caramelize.

Tip onto a baking sheet in one layer and bake for 18-20 minutes. Leave to cool, then store in an air-tight container.
