Real Chicken Nuggets with Smoky BBQ Sauce

We give you this recipe in honor of our children, who, when they were little, would beg us to BUY chicken nuggets like the other mothers and not make our own! As you already know, a chicken nugget is simply a vehicle for dipping — it’s really all about the sauce. Although ketchup was our children’s top choice (and we dare say, the proportion of nugget to ketchup was often questionable), we found this smoky and sophisticated sauce right up our alley!

Real Chicken Nuggets with Smoky BBQ Sauce

2 tbs. mayonnaise
2 skinless, boneless chicken breasts, cut into nugget-size pieces
1 oz. fresh bread crumbs (about ⅓ cup)
1 oz. lightly crushed cereal (about ½ cup) [we used corn flakes]
2 tbs. light muscovado sugar* (⅓ cup packed)
2 tbs. wine vinegar
4 tbs. tomato ketchup
1 tbs. Worcestershire sauce
¼ tsp. smoked paprika

Heat the oven to 425°F.

Put the mayonnaise in a bowl with the chicken and stir well to coat. Mix the bread crumbs with the crushed cereal and a good bit of seasoning. Tip the crumbs onto a plate and dip the chicken pieces in, coating them well. Place on a baking tray and bake for 10 minutes, until tender but still juicy.

Meanwhile, combine the sugar, vinegar, ketchup, Worcestershire sauce, and paprika in a small sauce pan with 6 tbs. of water. Allow to bubble and reduce for 5 minutes. Serve with the chicken nuggets.

*Or use light brown sugar.
