Seeded Wholemeal Soda Bread

We have done A LOT of baking in our time, but we have never run across a recipe that instructs one to mix the dough “with the blade of a knife.” Well, naturally our curiosity was piqued and it had to be tried. All we can say is that these humble five ingredients make the most delicious, homey, and wholesome bread — that is indeed stirred with the blade of a knife!

Seeded Wholemeal Soda Bread

3 cups + 3 tbs. wholewheat flour
½ cup seeds (we used pumpkin, sesame, flax, and sunflower)
1 tsp. baking soda
1 tbs. black treacle (or molasses)
½ cup plain yogurt mixed into 1¾ cups water

Heat the oven to 400°F and line a baking sheet with parchment paper.

Put the flour, seeds, baking soda, and a pinch of salt in a large bowl. Stir the treacle into the yogurt and water mixture until it dissolves, then stir into the flour mixture with the blade of a knife until you have a soft, sticky dough. Leave for 5 minutes for the liquid to be absorbed into the bran.

Shape into a 7″ round  on the baking sheet. It will be very sticky, so don’t overhandle it. Bake for 25-30 minutes until the crust is golden and the loaf sounds hollow with tapped underneath.
