Roasted Salt and Paprika Almonds

We’ve taken a good idea and made it great: GoodFood suggested the ingredients, but we think our take on the technique renders a result that is not just good, but down right addictive. Using the microwave oven to ‘roast’ the almonds is also faster than using a conventional oven — you’ll be finished cooking and all cleaned up in the time it would take just to preheat the oven to 350°, so nibbling time just arrives that much sooner!

Roasted Salt and Paprika Almonds

5 oz. raw almonds (about 1 cup)
1 tbs. butter
½ tsp. kosher salt
½ tsp. smoked paprika*

Spread the almonds in a single layer in a glass pie plate. Dot with small bits of the butter. Microwave until fragrant, stirring every minute, for 2-3 minutes total. Stir in the salt and smoked paprika. Continue to microwave for 2 more minutes, stirring at the halfway point. Let cool until crunchy.

*For another delicious option, substitute ½ tsp. curry powder for the smoked paprika.
