Stir-Fried Red Cabbage with Walnuts and Stilton

We adore Stilton and here it is crumbled over sweet red cabbage and toasted walnuts, then drizzled with a bit of maple syrup: YUM. Red cabbage is a much over-looked veg in the US, but very popular in the UK, especially in the winter months. The quick stir-fry is a great way to maintain its crunch and to prepare an excellent side dish with not a bit of fuss.

Stir-Fried Red Cabbage with Walnuts and Stilton

½ cup walnuts, roughly chopped
1 tsp. walnut oil
1 tsp. vegetable oil
½ red cabbage, cored and finely shredded
1 red onion, thinly sliced
2 tsp. fresh thyme leaves
1 tbs. red wine vinegar
½ cup Stilton, crumbled
maple syrup, for drizzling

Toast the walnuts in a dry wok or frying pan for 3-4 minutes, then transfer to a small plate. Add the oils to the hot wok and stir-fry the cabbage and red onion for 5 minutes, until tender but still crisp.

Stir in the thyme, vinegar, and toasted walnuts. Season, then transfer to a serving bowl. Scatter over the Stilton and drizzle with maple syrup. Serve immediately.
