Apple, Pear, and Cherry Compote

Breakfast, snacktime, dessert — this compote finds its way into every part of the day, and happily so! GoodFood suggests serving with ice cream for an easy dessert option, turning it into breakfast as an accompaniment to Cinnamon Pancakes, or baking it into a Sugar-Crunch Fruitcake, which will stand in at any time of the day that hunger beckons. We think you might also stir it into yogurt and top with granola, or mix it through your hot oatmeal . . . use your imagination and it won’t be difficult to use up this panful of yumminess!

Apple, Pear, and Cherry Compote

3 eating apples (we used Pink Lady), peeled, cored, and cut into wedges
2 cooking apples (we used Braeburn), peeled, cored, and cut into 1” chunks
3 firm pears (we used Comice), peeled, cored and cut into wedges
3 tbs. sugar
5 oz. dried sour cherries (1 cup)

Put the apple and pear pieces in a pan with the sugar and ¼ cup water. Bring to a simmer, then gently cook, covered, for 15 minutes or so until the cooking apple chunks are beginning to break down. Remove the lid and continue cooking until the eating apple wedges and pear wedges are tender, and the cooking apple chunks have broken down almost completely. Stir in the cherries and cook 1 minute more before removing from the heat to cool. Serve warm over vanilla ice cream, if you like. Store in the fridge for up to 5 days.
