Maple Mustard Salmon

Dinner can be on the table in 20 minutes — seriously!! Here is the proof. This simple but sumptuous salmon recipe is written for 2 servings, but can be easily doubled or tripled. Everything you need is in your fridge, making this a solid ‘go-to’ for a great, yet effortless dinner, with a tossed green salad or some roasted veggies rounding it out perfectly.

Maple Mustard Salmon

1 tbs. Dijon mustard
1 tbs. wholegrain mustard
2 tsp. maple syrup
2 tsp. olive oil
2 salmon fillets
lemon wedges, to serve

Heat the oven to 450°F. Lightly grease a small baking tray.

Combine the mustards, maple syrup and oil. Pat the salmon dry with paper towel, place on the baking tray and season. Spoon the mustard mixture on top and bake for 8-10 minutes, until the fish flakes easily. Serve with lemon wedges.
