Sticky Orange and Soy Salmon

It’s no secret we eat a lot of salmon, and this easy and über-delicious recipe might just be our new favorite! The salmon fillets begin by luxuriating in a sweet and spicy marinade which is later bubbled down to make a sublime sauce with which to bedeck the moist, coral goodness that emerges from the oven. We served this with steamed brown rice and Sesame and Ginger Green Beans

Sticky Orange and Soy Salmon

zest and juice of 1 large orange
4 tbs. reduced-salt soy sauce
4 tbs. honey
3 tbs. sriracha hot sauce (more or less to taste)
1 tsp. sesame oil
4 salmon fillets

In a shallow dish, combine the zest and juice, soy sauce, honey, sriracha, and sesame oil. Whisk to emulsify, then add the salmon skin-side down. Cover and chill at least 30 minutes or up to 4 hours.

Heat the oven to 400°F. Remove the salmon from the marinade and place on a foil-lined baking sheet. Transfer the marinade to a small saucepan. Cook the salmon in the oven for 15 minutes, or until it just begins to flake when pricked with a fork.

Meanwhile, simmer the marinade for 5-6 minutes until thickened. Spoon a little of the sauce over the salmon and place back under the broiler for 1-2 minutes to glaze. Serve with the remainder of the sauce poured over the top of the salmon.
