Simple Chicken Chipotle Burgers

The preparation for these burgers may be simple, but the taste is anything but. Chipotle paste adds just the right amount of heat without being overly spicy, and the addition of sharp cheddar cheese and mellow avocado make for a supremely good burger. We grilled corn on the cob to serve alongside and dinner was done — the perfect, and perfectly simple, summer supper!

Simple Chicken Chipotle Burgers

2 large, boneless, skinless chicken breasts or 8 chicken thighs
2 tbs. chipotle paste
1 tsp. vegetable oil
4 slices sharp English cheddar
4 brioche buns, split and toasted
mayonnaise, lettuce, tomato and sliced avocado, to serve

Cut the chicken breasts in half and flatten between two sheets of parchment paper to achieve a consistent thickness. If using chicken thighs, there is no need to do this step.

Combine the chipotle paste and oil in a bowl with seasonings and toss in the chicken. Cover and chill at least one hour or up to overnight.

Heat the grill and cook the chicken for 8-10 minuets, turning once, or  until cooked through. Top with cheese to melt at the very end. Spread the toasted buns with mayonnaise, top with lettuce and tomato, then top with the chicken and avocado, to serve.
