Summer Berries with Sweet Wine Cream

Here is a height-of-summer treat that you won’t want to take a miss on! The cream flavoured with a dessert-type wine is what makes the dish special, but you’ll want to make sure you put your hands on only perfectly ripe and succulent berries for success. Pour the rest of the bottle of your chosen wine to serve alongside, and enjoy!

Summer Berries with Sweet Wine Cream

26 oz. mixed summer berries
2 tbs. cassis
5 tbs. sweet white wine (we used a late-harvest Viognier)
2 tbs. caster (superfine white) sugar
1¼ cups whipping cream
Honey and Vanilla Madeleines (or some other crumbly biscuit or spongy cake), to serve alongside


Hull or de-stalk the fruits as necessary, then tip into a serving bowl. Drizzle with the cassis and mix together gently.

Measure the sweet wine and sugar into a bowl. Add the cream and whisk until it just holds its shape and flops from a spoon. Spoon into a bowl and offer alongside the berries.
