Summer Steak Salad with Avocado Dressing

If you are like us, and grew up in California, avocados are a food group; they have been a favorite staple of ours for as long as we can remember. In fact, we should be credited with this whole ‘Avocado Toast’ trend — seriously! Anyway, we were happy to try this bright and healthy salad tossed with an avocado dressing. Now, as you have just been made aware, we have much knowledge here, and this is a winner!

Summer Steak Salad with Avocado Dressing

For the dressing:

1 ripe avocado, cubed
5 tbs. fresh cilantro, chopped, plus more to garnish
juice of 1 lime
2 tbs. extra-virgin olive oil
pinch of sea salt

For the salad:

1 tbs. olive or vegetable oil
½ large red onion, sliced into rings
1½ lb. sirloin steak
3 tbs. white wine
4 large handfuls of salad greens
2 cooked ears of corn, kernels cut off (we put ours on the grill for 10 minutes on medium), or 1×14 oz. tin sweetcorn
1 cup cherry tomatoes, halved
½ red pepper, deseeded and chopped
3-4 radishes, sliced

Place the avocado, cilantro, lime juice, oil, and salt in a small food processor or blender and whiz into a smooth, thick dressing. Set aside.

Heat the oil in a skillet and cook the onions over medium heat for 5-6 minutes to soften, stirring occasionally. Season the steak well and add to the pan, pushing the onions to one side. Cook 5-6 minutes per side, or until desired doneness. Remove to a cutting board and let rest at least 5 minutes. (Or, cook on the grill over medium heat for 4-5 minutes per side.)

Add the wine to the skillet with the onions and cook until evaporated. Set aside to cool slightly.

Combine the greens, corn, tomatoes, red pepper, and radishes in a large salad bowl. Toss with half the dressing and divide between 4 plates. Slice the steak and place on top. Add a spoonful of onions, a scoop of the remaining dressing, and garnish with cilantro, to serve.
