Griddled Baby Gems with Balsamic and Goat’s Cheese

This is easily our new favorite salad! Not only is it dead easy, it’s completely fabulous. Baby Gems can be difficult to find, but they are worth the search. Delicate and tender, they are enhanced by a quick char on the grill, a simple dressing, and a scattering of creamy cheese and fruity avocado — a lovely veggie option or a fantastic side to any summer meal. Griddled Baby Gems with Balsamic and Goat’s Cheese

4 Baby Gem lettuces, ends trimmed, quartered
3 tbs. olive oil
2 tbs. balsamic vinegar
1 tbs. honey
4 tbs. soft goat’s cheese
½ avocado, diced

Put the lettuce on a plate, drizzle with a little of the oil, then season. Heat the grill or griddle to medium and place, cut-side down onto the surface . Cook for 30-60 seconds, or until slightly charred. Return to the plate.

Combine vinegar and honey, then whisk in the remaining olive oil to make a dressing. Drizzle over the lettuce and top with goat’s cheese and avocado.
