Mustard and Rosemary Lamb Chops

Fluffy, garlicky mashed potatoes would be the ideal accompaniment to these easy and scrumptious lamb chops. The preparation takes mere minutes and imparts just the right amount of subtle flavor so as not to overwhelm the tender lamb. If the weather is poorly, simply pop them under the broiler and pretend you are dining al fresco!

Mustard and Rosemary Lamb Chops

2 garlic cloves, peeled and minced
1 tbs. olive oil
2 tbs. fresh rosemary, chopped
1 tbs. Dijon mustard
8 lamb chops

Combine the garlic, olive oil, rosemary, Dijon, salt and pepper. Rub into the lamb chops and let stand at room temperature for 30 minutes. Heat the grill and cook for 2-4 minutes per side, depending on thickness and your preference for doneness.
