Salted Basil Crackers

There is something special about a homemade cracker and these savory, herby, salty ones are extra-special. Don’t be intimidated by the idea; it really is easy and, we promise, you will feel quite smug in your accomplishment because they are impressive, yet require little effort. We served them with White Bean, Chick Pea, and Roasted Garlic Dip and a chilled glass of Rosé. Who needs dinner?!?

Salted Basil Crackers

2 cups all-purpose flour
pinch salt
pinch sugar
7 tbs. butter, melted
1 egg, separated
4-6 tbs. water
handful of small basil leaves, shredded, plus more left whole for decoration
sea salt flakes (we used Maldon)

Heat the oven to 400°F.

Tip the flour, salt, and sugar into a bowl, then stir in the melted butter, egg yolk, and enough water to make the dough come together. Add the shredded basil leaves and mix well with your hands.

Place a piece of parchment paper on a work surface and roll out the dough to approx. 11″x16″. Place the whole basil leaves on top and roll gently to squash them in. Transfer the parchment paper to a baking sheet. Brush the top with the egg white and sprinkle with sea salt.

Bake for 12-15 minutes, until everything is golden and the edges are crisp. Transfer to a wire rack to cool.
