Salmon with a Mustard Pistachio Crust

You know we eat a LOT of salmon, and here might be one of the all-time great recipes! Seriously — quite sophisticated and dinner party-worthy. That said, it is honestly simple to make and it cooks in the oven so the washing-up is a snap. The perfect recipe, right?!?  It was suggested that a green veg and boiled potatoes be serve alongside and we wholeheartedly agree.

Salmon with a Mustard Pistachio Crust

4 fillets of salmon
zest of 1 lemon, juice of ¼ lemon
2 tbs. wholegrain mustard
2 tbs. honey
¼ cup salted pistachio nuts
scant ½ cup breadcrumbs (we used panko)
¼ cup grated Parmesan cheese
2 tbs. olive oil

Heat the oven to 375°F. Line a baking sheet with foil.

Pat the salmon dry with paper towel and lay on the baking sheet. Season with salt and pepper.

In a small bowl, combine the lemon zest, lemon juice, mustard, and honey. Spread evenly over the tops of the salmon fillets.

Place the pistachios in a small food processor and whiz to chop (or finely chop by hand). Add the breadcrumbs, Parmesan and oil, then pulse to combine. Spread the mixture on top of the salmon, using your fingers and pressing so that it sticks.

Bake to 15-20 minutes, until the salmon is cooked and the pistachios are golden brown. Let the salmon rest for 5 minutes, then serve with a green veg and boiled potatoes.
