Berry Jam

Making jam is fun and easy. If you’re nervous about giving it a go, then this is the perfect recipe to try your hand. Basically, jam is roughly 4 parts fruit and 3 parts sugar with some sort of thickening agent, such as pectin or lemon juice. Different fruits have varying amounts of natural pectin, so a jam will need more or less thickening accordingly. This jam tastes like summer on a spoon: use it to spread on toast, top your oatmeal, sandwich between two pieces of shortbread — endless possibilities and endless YUM!

Berry Jam

5½ oz. raspberries (scant 1½ cups)
3½ oz. strawberries (1 cup sliced)
7 oz. caster (superfine white) sugar (¾ cup)
1 tbs. lemon juice

Combine all the ingredients in a heavy saucepan and bring to a boil. Cook over medium-high heat for 10-15 minutes until the jam thickens enough to coat the back of a spoon. Tip into a bowl and set aside to cool. Store in the refrigerator.
