Mustard and Rosemary Lamb Chops

These juicy, flavorful, and succulent lamb chops are so simple — perfect for a relaxed warm-weather evening. The combination of rosemary and garlic is classic and suits the chops so well. These are destined to be eaten outside, accompanied by an ear of butter-smeared corn on the cob! We think a side of garlic mashed potatoes wouldn’t go amiss either.

Mustard and Rosemary Lamb Chops

2 tbs. Dijon mustard
2 tsp. freshly chopped rosemary
2 garlic cloves, crushed
1 tbs. olive oil
8 lamb chops

In a small bowl, combine the mustard, rosemary, garlic, olive oil, and ½ tsp. pepper. Brush on both sides of the lamb chops and leave to rest at room temperature for 30 minutes.

Prepare the grill and season the lamb chops with salt. Cook the lamb chops 4 minutes per side, or to your liking. Tent with foil and leave to rest for 5 minutes before serving.
