Butterscotch Bars

These delicious bars are so easy to make and so luscious to eat, we know you will adore them as much as we did. Minutes in the making, they are chock full of chocolate and nuts. As with any good bar cookie, they are crisp at the edges and have a dense, chewy texture in the center Although the recipe calls for milk chocolate, any type you fancy would work perfectly.

Butterscotch Bars

9¾ tbs. butter
2 eggs
12 oz. light muscovado sugar
2 tsp. vanilla extract
9 oz. self-rising flour (2¼ cups)
3.5 oz. bar of milk chocolate, cut into large chunks
4 oz. macadamia or pecan nuts, coarsely chopped (1½ cups)

Heat the oven to 350°F and butter a 7″ x 10″ baking pan.

Melt the butter and set aside to cool slightly. In a medium bowl, beat the eggs with the sugar and vanilla, then add the melted butter. Tip in the flour, chocolate, and ¾ of the nuts. Blend until just combined, then pat into the prepared pan. Sprinkle the remaining nuts over the top.

Bake for 30-35  minutes, or until a tester in the center comes out clean. Leave to cool, then cup into bars.
