One-Pan Salmon with Roast Asparagus

As you may have guessed, we eat a lot of salmon and we are always looking for new ways to serve it. Happily, GoodFood Magazine feels the same way and provides us with constant inspiration. This fresh, easy, and super-healthy supper has everything you need in one pan — moist, flavorful salmon nestled among tender roasted veggies and topped with fresh basil leaves. Yum! 

One-Pan Salmon with Roast Asparagus

14 oz. new potatoes, halved if large
2 tbs. olive oil
12 asparagus spears
2 handfuls cherry tomatoes
1 tbs. balsamic vinegar
2 salmon fillets
handful of basil leaves

Heat the oven to 427°F. Tip the potatoes and 1 tbs. of the oil into an ovenproof dish and roast for 20 minutes until starting to brown. Toss in the asparagus spears and cherry tomatoes, nestle the salmon into the pan and drizzle with the remaining oil and vinegar. Season everything and roast for a further 10-15 minutes, or until the salmon is cooked through and the veggies are tender. Scatter with basil leaves and serve.
