Parsley and Walnut Salmon

Who says the only meals worth eating are ones that require hours of fussing in the kitchen?!? This salmon recipe, which is ridiculously easy and incredibly delicious, disproves any misguided notion that more time at a hot stove or a lengthier list of ingredients is necessarily better. Give it a go — you’ll not be disappointed!

Parsley and Walnut Salmon

2 oz. walnuts, soaked in cold water for 5 minutes (generous ½ cup)
small handful of parsley, roughly chopped
2 tsp. balsamic vinegar
1 tsp. olive oil
1 tsp. orange zest
4 salmon fillets

Heat the oven to 350°F. Line a baking sheet with foil.

In a small food processor, whiz the drained walnuts, parsley, vinegar, oil, orange zest, and some salt and freshly ground black pepper. Place the salmon on the baking sheet and divide the walnut pesto between the fillets evenly. Bake for 12-15 minutes, until just cooked through.
