Crunchy Salsa Cod

A recent ‘at home’ day prompted a much needed clean-out of the pantry. Golly, the things we found! Anyway, one item was a jar of pineapple salsa that was just about to reach its ‘best by’ date. A little research produced this recipe and weren’t we rewarded for our virtuous tidying up?!? Absolutely delicious and goes together in a jot — use any salsa you like and enjoy!

Crunchy Salsa Cod

4 chunky skinless cod fillets
8 oz. jar mild salsa
3 oz. mature cheddar cheese (1 cup, packed)
1 large avocado, diced
juice of 1 lime
handful fresh cilantro, chopped
tortilla chips
brown rice and salad to serve

Heat the oven to 425°F. Arrange the fish in a shallow baking dish, season, then spoon the salsa on top. Scatter with the cheese and bake for 15 minutes, or until the fish flakes easily when tested with a fork.

Meanwhile, stir the avocado with the lime juice, cilantro, and some seasoning. Place the cod on individual plates, spoon over the avocado and top with a few crumbled tortilla chips.
