A pavlova is a large meringue filled with whipped cream and usually served in a round shape. But we thought your sweet heart might like to be treated to a heart shaped version for Valentines Day! Although it may look rather daunting to make, we can’t begin to tell you how easy this is! Draw the shape you want on a piece of parchment paper, turn the paper over and spread the meringue within the lines. Happy Valentines Day!!
4 egg whites
9 oz. caster (superfine white) sugar (2 cups plus 2 tbs.)
1 tsp. corn starch
1 tsp. vanilla extract
1 tsp. white wine vinegar
1½ cups heavy cream
1 tbs. confectioner’s sugar
Heat the oven to 300°F. Using a pencil, mark out the circumference of a dinner plate on a piece of baking parchment. Turn it over and place on a baking sheet.
Whisk the egg whites to form stiff peaks, then spoon the sugar in 1 tbs. at a time to make a glossy meringue. Whisk in the corn starch, vanilla, and vinegar. Use a spatula to spread the mixture inside the circle, creating a crater in the middle by making the sides a little higher. Bake for 1 hour, turn off the heat and leave in the oven to cool completely.
To serve, whip the cream with the confectioner’s sugar and mound in the middle of the pavlova. Top with berries.
