Lemon-Rubbed Salmon

This light, lovely salmon recipe couldn’t be easier or more full of fresh flavor. A quick 10-minute marinade makes all the difference and you can cook the slamon outdoors on the grill or inside under the broiler. Most any accompaniment would make this a memorable meal: we like to serve it with Risotto with Peas and Broad Beans for a simple, yet sophisticated supper.

Lemon-Rubbed Salmon

zest and juice of 1 large lemon
1 garlic clove, finely chopped
small handful fresh tarragon, finely chopped
2 tbs. olive oil
4 salmon fillets

Put the lemon zest and juice, garlic, tarragon, and oil in a shallow, non-metallic dish and stir together. Season with salt and pepper, then add the salmon. Turn to coat in the mixture, rubbing it into the fish well. Cover and set aside for 10 minutes.

Cook the salmon on a medium grill or under the broiler for 7-10 minutes, turning once, until just cooked through. Place salmon and plates and drizzle any pan juice on top.
