Chorizo, New Potato, and Cod One-Pot

Light, fresh, healthy . . . all in one pretty package from one pot. What’s not to like?!?  We especially love the use of Sherry here which adds a lovely flavor note and compliments the zesty chorizo and tender potatoes. Do note that you may substitute haddock, sole or tilapia for the cod, but either way, enjoy this easy-to-make and easy-to-wash up meal!

Chorizo, New Potato, and Cod One-Pot

1 tbs. extra-virgin olive oil, plus more to serve
2 oz. Spanish chorizo, peeled if necessary and thinly sliced
1 lb. new potatoes, sliced
4 tbs. Sherry, or more if needed
2 skinless cod fillets
good handful of cherry tomatoes, halved
bunch parsley, chopped

Heat a large, lidded skillet, then add the oil. Tip in the chorizo and fry until it starts to release its juices, about 2 minutes. Tip in the potatoes and some seasoning. Splash in 3 tbs. of the Sherry, cover the pan tightly and leave to cook for 10-15 minutes, until the potatoes are just tender. Move them around the pan halfway through.

Season the fish. Give the potatoes another stir, add the tomatoes and most of the chopped parsley, then lay the fish on top. Splash over the remaining 1 tbs. Sherry, put the lid back on and leave to cook for 5 minutes, or until the fish has turned white and is flaky when prodded in the middle. Scatter with a little more parsley and drizzle with more extra-virgin olive oil.
