Mark your calendars . . . Saturday, October 10th is World Porridge Day!!! In fact, one of the most popular culinary events in Scotland is the annual World Porridge Making Championship which will take place on the same day. In honor of this most glorious occasion, we give you Perfect Porridge. It’s simple, nourishing, warming and, we think, prize worthy! Get out your spurtle (a wooden dowel used to stir porridge) and celebrate!
1¾ oz. rolled oats (scant ½ cup)
1 cup water, milk, or a mixture of the two
pinch of salt
Greek yogurt thinned with milk, to serve
honey, to serve
Place the oats, water and/or milk, and salt in a small saucepan and bring to a boil. Reduce the heat and simmer for 4-5 minutes until thickened. Transfer to a bowl and top with yogurt and honey.
