Grilled Thai Salmon

We both have twenty-something sons, and as you can imagine, they often just show up for dinner. As lovely as it is to see them, we can be caught off guard. Well, here is our new go-to for impromptu suppers, full of flavor that belies the 5 minutes of prep time and 10 minutes of cooking time. Alright boys, come on over!!!!

The salmon is ‘grilled’ in the British sense — we would say ‘broiled,’ of course!

Grilled Thai Salmon

4 salmon fillets
2 tsp. vegetable oil
small knob of ginger, peeled and grated
1 mild red chili, deseeded and finely chopped
6 green onions, finely sliced
2 tbs. soy sauce
½ tsp. sugar
fresh cilantro, roughly chopped

Heat the broiler to high. Place the fish on a foil-lined baking sheet. Broil for 5-6 minutes, or until just cooked through. Place on a serving plate, cover and set aside.

Heat a wok and add the oil, then stir-fry the ginger, chili, and onions for 2-3 minutes. Stir in the soy sauce, sugar, and a splash of water. Take off the heat and add the cilantro. Serve immediately over the salmon. Delicious with rice or noodles.
