Porridge with Blueberry Compote

Here is the perfect, cozy breakfast for two now that it’s blueberry season!

Porridge with Blueberry Compote

12 tbs. rolled oats
½ carton Greek yogurt (we used vanilla)
1¼ cups blueberries
1 tsp. honey

Put the oats and 1½ cups water in a small pan and bring to a simmer. Cook, stirring occasionally until thickened and soft. Remove from the heat and add the yogurt.

Meanwhile, tip the blueberries, honey, and 1 tbs. water into another pan. Gently poach until the berries have softened and begin to release their juices.

Spoon the porridge into 2 bowls and top with the blueberries.
