Fudgy Mocha Brownies

We know a thing or two about brownies, and these may be our new favorite. The addition of instant coffee powder enhances the chocolatey-ness of the bittersweet chocolate: how can anyone complain about that?!? Fudgy and squidgy, crisp on the corners and soft in the middle, these truly may the THE ultimate brownies!

Fudgy Mocha Brownies

8½ tbs. butter
7¾ oz. bittersweet chocolate, chopped
1 tsp. instant coffee powder
¼ tsp. salt
1¼ oz. granulated sugar (½ cup plus 3 tbs.)
1¾ oz. light brown sugar (¼ cup)
2 eggs
1½ tsp. vanilla extract
2½ oz. all-purpose flour (½ cup)

Heat the oven to 350°F. Grease and line an 8″ square pan with parchment paper.

Melt the butter, chocolate, coffee powder, and salt in a bowl set over a saucepan of gently simmering water. Stir until smooth. Remove from the heat and leave to cool slightly.

Whisk in the sugars until combined, then stir in the eggs and vanilla. Whisk in the flour until smooth and glossy. Spread in the prepared pan and bake for 25 minutes, or until the sides start to come away from the pan. Leave to cool, then cut into squares.
