Spicy Mini Meatloaves

Who wouldn’t want their very own personal meatloaf?!?  Well, here you are! You can be the barometer of how much heat you add by varying the amount of hot sauce, but we both agreed that the amount called for was just right. Make the little loaves ahead of time and keep them chilled if you wish. We served the meatloaves with Quinoa, Pea, and Avocado Salad.

Spicy Mini Meatloaves

1 lb. lean ground beef
1 slice bread, crumbed (we used whole wheat)
2 green onions, finely chopped
1 clove garlic, crushed
1 egg, beaten
1 tsp. ground cumin
¼-½ tsp. chili sauce (we used sriracha)
small handful cilantro leaves, chopped
4 tbs. chili ketchup
cherry tomatoes, halved, optional

Heat the oven to 400°F.

Gently mix together the beef, onions, garlic, egg, cumin, chili sauce, and cilantro. Season well. Be careful not to over-mix, or the meatloaves will be tough. Divide into 4 and shape each one into a small oval. Place on a baking sheet and top with the chili ketchup and tomatoes, if using.

Bake for 25-30 minutes until the meat has cooked through.
