Quinoa, Pea, and Avocado Salad

The next time you make quinoa, make a little extra and save it to make this amazing salad, wherein it gets tossed together with crisp pea shoots, creamy avocado, and a minty, lemon dressing that tastes like summer on a plate! Perfection, if we may say so. We served this with Spicy Mini Meatloaves, but you could toss in some sliced, cooked chicken and make a little more dressing for a complete supper.

Quinoa, Pea, and Avocado Salad

4 oz. frozen peas (1 cup)
juice of 1 lemon
2 tbs. olive oil
small handful mint leaves, chopped
small handful chives, snipped
2 cups prepared quinoa
1 avocado, chopped into large chunks
1 cup pea shoots

Put the peas in a large bowl and pour over just-boiled water from the kettle. Set aside.

Put the lemon juice in a serving bowl and whisk in some seasoning. Gradually whisk in the oil, followed by the mint and chives. Drain the peas and tip in along with the quinoa, avocado, and pea shoots. Gently fold everything together and serve immediately.
