Chocolate Zucchini Bread

Who are we kidding . . . this is really a cake and not a bread! (But hey, we don’t name the recipes!) Either way, this dandy little loaf will simply make you smile. Studded with grated zucchini, chopped walnuts, and chocolate chips, it is in its perfect place with a cup of tea or coffee. The recipe is simple as it follows the traditional method of mixing dry ingredients and wet ingredients in separate bowls, then merely folding the two together. Enjoy!

Chocolate Zucchini Bread

1 cup all-purpose flour
1¼ cup whole wheat flour
¼ cup cocoa powder, unsweetened
1 tsp. ground cinnamon
½ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
1½ cups grated zucchini (1 large)
¾ cup packed brown sugar
¾ cup (6 fl. oz.) vanilla yogurt (we used low-fat)
¼ cup honey
¼ cup vegetable oil
1 tsp. vanilla extract
2 egg whites, lightly beaten
½ cup semi-sweet chocolate chips
½ cup chopped walnuts

Heat the oven to 350°F and grease a 9″x 5″ loaf pan.

In a large bowl, combine the flours, cocoa, cinnamon, baking powder, baking soda, and salt.

In another bowl combine the zucchini, brown sugar, yogurt, honey, oil, vanilla, and eggs. Add the wet ingredients to the dry ingredients, stirring just until combined. Fold in the chocolate chips and walnuts, then pour the batter into the prepared loaf pan.

Bake for 50-55 minutes, or until a tester comes out clean. Leave to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
