Pan-Fried Salmon with Crispy Bacon and Peas

YUM! It’s hard to believe that four simple ingredients can combine to make the most wonderful supper, though of course, there is bacon involved! Prep time is 10 minutes and cooking time is 20 minutes, so this can be ready in a snap.  We think a great alternative would be to use blanched sugar snap peas and add a handful of freshly chopped mint. Enjoy!!!

Pan-Fried Salmon with Crispy Bacon and Peas

4 slices bacon
2 green onions, trimmed and sliced
8 oz. frozen peas, thawed (1¾ cups)
4 salmon fillets

Fry the bacon in a non-stick frying pan until crisp. Remove from the pan and set aside. Add the green onions and peas and cook for 5 minutes. Stir in the bacon then place in a serving dish and keep warm.

Season the salmon and add a little olive oil to the pan if it seems dry. Cook the salmon 4-5 minutes on each side, or until cooked through. Serve atop the peas and bacon.
