Chocolate Mint Cookies

Completely and utterly irresistible! You know how much we love chocolate and these simple cookies are our new favorite sweet: incorporating both cocoa powder and bittersweet chocolate, they literally melt in your mouth. Share them with someone and make their day! Seriously, drop what you are doing and make these fabulous little mounds of perfection AT ONCE! We dare you to eat just one!

Chocolate Mint Cookies

¾ cup light brown sugar, lightly packed
4 oz. soft butter
1 egg
1 tsp. vanilla extract
1 cup flour
5 tbs. unsweetened cocoa powder
½ tsp. baking powder
1 cup bittersweet chocolate chips

For the glaze:

½ cup confectioner’s sugar
2 tbs. boiling water
1 tbs. unsweetened cocoa powder
¼ tsp. peppermint extract

Heat the oven to 350°F and line two baking trays with parchment paper.

Cream the butter and sugar (use a stand blender for ease), then beat in the egg and vanilla. Mix the flour, cocoa powder, and baking powder in a bowl, then gradually add to the creamed mixture. Fold in the chocolate chips. Using a rounded tbs. (or a 1″ ice cream scoop) scoop the batter onto the baking sheets. (It will make approx. 20 cookies.) Bake for 12 minutes, then leave on the baking sheet for a minute or two before transferring to a cooking rack.

To make the glaze, combine all the ingredients in a small saucepan and heat until well combined. Let cool a bit then, using a teaspoon, drizzle over the cookies.
