Garden Tomato Salad

This is simplicity at its finest, and so versatile too! Potter around with various tomatoes, and change up the types of herbs and/or vinegar for endless variations on this delicious and fresh salad, the perfect side to so many entrées. Next time you find luscious tomatoes at the farmers market, keep this recipe in mind and you will be very happy with the results . . . we promise!

Garden Tomato Salad

6 cups ripe tomatoes – as many colors, shapes, sizes, and flavors as you like
¼ cup mixed fresh herbs (we like to use chives, thyme, parsley, and mint)
2-3 large shallots, finely minced
3 tbs. extra-virgin olive oil
3 tbs. white wine vinegar
1 tbs. honey

Slice the large-to-medium tomatoes and halve the smaller ones. Pick the leaves from the herbs and roughly chop, then mix the herbs with the shallots.

In a large bowl, whisk together the oil, vinegar, and honey. Toss in the tomatoes, with the herb and shallot mixture. Cover and chill for a few hours, then bring back to room temperature for 45 minutes before serving.
