Salmon Baked in a Foil Parcel with Green Beans and Pesto

What fun to open a shiny package and find a beautiful piece of salmon and tender green beans tucked beneath a delicious pesto and cheese topping! Although the recipe didn’t call for feta cheese, we love the combination of basil and feta, so we took the liberty and added it here. (It was a great idea — you are welcome Jamie Oliver!)  You can have your little blue box any day, this is our kind of parcel!

Salmon Baked in a Foil Parcel with Green Beans and Pesto

2 handfuls of green beans
2 chunky salmon fillets
2-3 heaping tbs. basil pesto
½ lemon
2-3 tbs. crumbled feta cheese (optional)

Preheat the oven to 400°F. Trim the beans and add to a large pan of salted, boiling water. Cook 3-4 minutes, until just tender, then drain in a colander.

On a large piece of foil, put half the beans in the middle, lay the salmon fillet on top, then top with half the pesto, salt, pepper, a little drizzle of olive oil, and a squeeze of the lemon. (Sprinkle half of the feta over the top, if using.) Pull the edges of the foil together and scrunch them to make a parcel. Place on a baking sheet and repeat with the other salmon fillet.

Bake 15-20 minutes, depending on the size of your salmon. Remove from the oven and let stand for a minutes before you carefully unwrap the parcel. Serve with new potatoes, fluffy rice, or crusty bread.
