Grilled Lemon and Garlic Chicken

A recent issue of GoodFood Magazine featured the food of Brazil. We”re game!!! This ‘Frango Churrasco’ is a classic marinated and grilled chicken dish. The recipe calls for piri-piri sauce which is a chili sauce made from bird’s eye chilis. If that is not in your store cupboard (it’s certainly not in ours), use any chili sauce you like, going as hot or mild as you fancy. These are tender and succulent and full of bright, Brazilian flavors. Bom Apetite!

Grilled Lemon and Garlic Chicken

2 lbs. boneless chicken thighs
zest and juice of 2 lemons
1 tbs. paprika
1 tbs. mild piri-piri sauce (or other chili sauce, depending on taste)
2 tbs. brown sugar, packed
3 garlic cloves, crushed
3 tbs. extra-virgin olive oil
2 tbs. chopped fresh cilantro

Combine all the ingredients in a shallow non-metallic dish and mix well. Cover and marinate for at least 2 hours, and overnight if possible. Bring to room temperature before grilling.

Thread half the thighs onto 2 large metal skewers or wooden ones that have been soaked in for water for 10 minutes. Place on a medium grill for 6 minutes per side.
