Pea Purée

Sophie Dahl, the granddaughter of the famous author Roahl Dahl, has written an entertaining cookbook entitled Miss Dahl’s Voluptuous Delights, and we were, of course, intrigued! One such delight is the pea purée. The perfect side dish to any number of entrées, we now make certain always to have frozen peas at hand to ensure we can make this creamy, green concoction whenever we are feeling ‘voluptuous’ or ‘delightful!’

Pea Purée

2 cups frozen peas
1 tbs. butter or olive oil
1 tbs. fresh, chopped mint (optional)
1-2 tbs. crème fraîche
salt and pepper

Cook the peas in boiling water for 5 minutes. Drain and put in a blender with the butter or oil, mint (if using), and the crème fraîche. Purèe, then taste and season accordingly.
