Butter Bean and Tomato Salad

We often find it difficult to find butter beans, so when we do come across them, we have a tendency to hoard. (You should see our basements!) Here, they are tossed with fresh tomatoes, red onion, cumin, and small bits of raw zucchini (which provide a wonderful crunch), in a light and fresh salad that will leave all takers most contented. All we can say is, “Find yourself some butter beans!”

Butter Bean and Tomato Salad

14 oz. can butter beans, drained and rinsed
17.5 oz. tomatoes, roughly chopped or halved if using cherries (4 cups)
2 small green and or yellow zucchini, diced small
1 small red onion
3 tbs. olive oil
2 tbs. lemon juice
1 tsp. ground cumin
chopped fresh cilantro or parsley

Tip all the ingredients into a large bowl with some salt and pepper and mix well. Cover and leave at room temperature until ready to serve. This salad is happily made the day before and chilled. Just bring it to room temperature and give it a good stir.
