Maple and Orange Glazed Chicken

We adored this winning little recipe. So easy to toss together and, although you can grill it straightaway, the longer you let the chicken marinate, the better. The tossed greens add a wonderful freshness to the deliciously juicy chicken. One enthusiastic GoodFood reader commented, “A brilliant store cupboard classic. I will do this again and again.” We completely agree!

Maple and Orange Glazed Chicken

4 boneless, skinless chicken breasts
3 tbs. maple syrup
1 tbs. wholegrain mustard
1 tbs. soy sauce
grated zest of 1 orange
dressed greens, to serve

Make several shallow slits across the top of each chicken breast. Tip the syrup, mustard, soy sauce, and orange zest into a wide, shallow bowl and swirl them together until everything is mixed. Add the chicken breasts and turn them in the mixture until they are well coated. At this point you can chill them for up to 24 hours, or cook them straightaway.

Heat the grill and cook the chicken 5-6 minutes per side, turning once and brushing with any remaining marinade, until the chicken is browned and glossy. Serve over dressed greens.
