Salmon with Capers and Dill

We are caper lovers from way back, so we didn’t have to think twice before trying out this simple but succulent salmon recipe. The cooking time is just about 10 minutes, which includes chopping the dill, but that small effort yields a big payoff: there is so much flavor here you’ll be making this again and again!

Salmon with Capers and Dill

2 oz. butter (4 tbs.)
4 salmon fillets, skin on or off
4 tbs. capers, drained
2 tbs. lemon juice
6 tbs. water
4 tsp. chopped fresh dill

Place a large frying pan on a medium-high heat. When it is just hot, add 1 tbs. of the butter, very quickly followed by the salmon – with the presentation side down. Fry for 3-4 minutes or until golden brown, then turn over. Season with salt and pepper and cook another couple of minutes until just cooked through. (This depends on the thickness of the salmon and the heat of the pan.)

Add the capers, lemon juice, water, and remaining butter. Boil for 1 minute, check seasoning, then remove the salmon to a serving plate. Stir in the dill and pour the sauce over the fish to serve.
