Salmon with a Cheesy Crunchy Crust

If you fancy something special but don’t want to fuss, this is the recipe! Grate a little cheese, chop a little parsley, and you’re nearly there. The salmon stays moist under a blanket of nutty Gruyère cheese and crunchy toasted almonds.We like to add steamed carrot coins and boiled new potatoes to complete this effortless, yet impressive and irresistible entree.

Salmon with a Cheesy Crunchy Crust

4 salmon fillets
2 tbs. softened butter
4 tbs. slivered almonds, toasted lightly*
4 tbs. chopped fresh parsley
¾ cup coarsely grated Gruyère cheese

Preheat the oven to 375°. Use cooking spray or butter a shallow, ovenproof dish large enough to hold all the salmon fillets. Place the salmon in the dish and season. Spread each fillet with a little butter.

Mix together the almonds, parsley, and cheese, then press it on top of the salmon. Bake for 15-20 minutes, or until the cheese is melted and the salmon is cooked.

*To toast the almonds, place them in the 375° oven for 8-10 minutes until lightly golden.
