Chicken in Barbecue Sauce

We have enjoyed this recipe for years and years: a dear friend from England shared it with us when our children were in elementary school. Talk about a recipe standing the test of time — this is a keeper and still commonly requested by our now twenty-something children! Put everything in the oven and a truly delicious, homey meal awaits you. Call the kids in from the back garden . . . it’s dinnertime!

Chicken in Barbecue Sauce

4 boneless, skinless chicken breasts*
olive oil
1 medium onion, minced very finely
5 tbs. white wine
5 tbs. soy sauce
1 heaped tbs. tomato paste
1 heaped tsp. ground ginger
1 heaped tsp. dry mustard powder
1 fat garlic clove, crushed
1 tbs. brown sugar

Heat the oven to 375°F. First of all, make sure the chicken pieces are absolutely dry by patting them with a paper towel. Then rub each with olive oil and season with black pepper. Now pop them in a shallow roasting tin, tucking the onions amongst them.

Make the sauce by combining the remaining ingredients. Pour this over the chicken and put the tin in the oven on the highest shelf. Cook for 25 minutes, basting frequently, until the chicken is cooked and the sauce has thickened.. Serve with fluffy rice and a salad.

* You can use boneless thighs and increase the cooking time by 10 minutes. You can also use bone-in chicken breasts or thighs. To do this, once the chicken and onions are in the tin, drizzle with a little more olive oil and cook for 30 minutes. Then pour in the sauce over and continue as above.
