Cod with Tomato and Chorizo Sauce

Try this quick and healthy dish when you next fancy a fish supper: ready in no time and positively bursting with flavor, we were won over instantly. Serve it with a green veg and dinner is done! And take note: as delicious as the cod is partnered with this savory, mildly spicy tomato sauce, we also think the sauce would be delicious with chicken, or tossed with a bit of pasta. Endless possibilities!

Cod with Tomato and Chorizo Sauce

1 tbs. olive oil, plus more for the cod
garlic clove, thinly sliced
3 oz. Spanish chorizo, cut into thin matchsticks (casing removed if thick)
pinch of red chili flakes (optional)
14 oz. can chopped tomatoes (we like to use Fire-Roasted)
2 thick cod fillets, or other sustainable white fish

Heat the oil in a pan and cook the garlic and chorizo for a few minutes. Add the chili flakes and tomatoes. Simmer for 10 minutes, or until thickened. Season and set aside.

Meanwhile, rub the cod with a little more olive oil and season. Broil (or poach or bake) until cooked through, 4-5 minutes per side. Serve the fish with the sauce spooned over the top.
