Peanut Butter Brownies

Who doesn’t love chocolate and peanut butter? In these little squares of heaven, both ingredients combine to form the most decadent brownie! Crunchy peanut butter is used in place of butter and the result is something that hints of a confection, but has the crumb of a brownie, with a delightful crunch from the bits of peanuts. Everything is mixed in a saucepan so the washing up is a snap. Go on, get out the peanut butter, you know you want to!!!!!

Peanut Butter Brownies

8 oz. crunchy peanut butter (1½ cups)
7 oz. dark chocolate
10 oz. light brown sugar (1¼ cup)
3 medium eggs
3½ oz. self-rising flour (¾ cup)

Heat the oven to 350°F. Grease an 8-inch square pan and line it down the middle with parchment paper. Set aside 3 tbs. of the peanut butter and 2¼ oz. of the chocolate.

Combine the remaining peanut butter, chocolate, and sugar in a large sauce. Cook over low heat until the chocolate is melted and the sugar is nearly dissolved, stirring often. Set aside to cool a bit. Stir in the eggs, one at a time, then stir in the flour. Spread in the prepared pan. Melt the reserved peanut butter in the microwave on High for 45 seconds, or until runny, then drizzle over the brownie. Bake for 30-32 minutes, or until it has a crust but the middle still seems slightly undercooked.

Melt the reserved chocolate for 1-2 minutes in the microwave and drizzle over the brownies. Cool in the pan before cutting into squares.
